A qualified caterer is able unsupervised to identify and assess raw produce as well as semi-manufactured products and finished products. He or she is also able to prepare, cook and serve a basic range of dishes in self-service restaurants and canteens, carry out cash register functions and service guests, display a standard food and beverage assortment in a vending area and carry out ordinary cleaning functions.

Range of occupations accessible

Qualified caterers generally work with production, cleaning and sale.

In the field of production, their jobs include frying, braising, steaming and boiling food, preparation and presentation of hot and cold dishes on the basis of fresh produce, semi-manufactured products and finished products.

A caterer's sales-related assignments include servicing of customers and guests, various counter functions such as portioning and display of food, sale of own articles and receipt of payment, as well as understanding of various payment functions.

Duration and mode of education and training

The total duration of the education and training programme is 3 years, with 45 weeks of formal education and training and 111 weeks of on-the-job training.

Danish vocational education and training programmes are alternating programmes, which means that the education and training activities alternate between education and training at a school and on-the-job training in an enterprise.

Level of certificate

The training programme is a full vocational education and training programme, equivalent to level 3 in the Isced system (Isced 1997).

Access to the next level of education/training

The education and training described in this certificate gives access to level 4 (Isced) education and training in Denmark.

In pursuance of an order issued by the Danish Ministry of Children and Education, the awarding authority is authorised to issue a certificate concerning this education and training programme.

Grading scale

The following verbal scale is used in the certificate of apprenticeship: passed, passed with distinction, bronze medal, silver medal. 

The 7 grade scale is used in the certificate issued by the training college.
